Ingredients
  • 400 gr. fresh peas
  • 1 spring onion
  • 1 radicchio
  • 150 gr. strawberries
  • 50 gr. hydrated dried tomatoes
  • Fresh mint leaves
  • 1 carrot
  • ½ red pepper
  • Salt and pepper
  • Extra virgin olive oil
  • Sherry vinegar
Preparation
  1. Blanch the peas for one minute in boiling water and cool immediately in ice water.
  2. Finely chop the onion and dice thecarrot and pepper.
  3. Chop up the tomatoes and slice the strawberries.
  4. Break up the radicchio.
  5. Mix all ingredients and add mint leaves. Dress.
  6. Use 2 radicchio leaves to make a bowl – and repeat four times.
  7. Finally, serve the pea salad in radicchio leaves.
You can add slivers of ham.
