Ingredients
  • 300 gr. tagliatelline
  • 1 bunch basil
  • 50 gr. pine nuts
  • 150 ml. olive oil
  • 50 gr. Parmesan cheese
  • 1 clove garlic (optional)
  • Salt and pepper
Preparation
  1. Put a bunch of basil, the olive oil, a clove of garlic (optional), grated cheese and some nuts into a food processor and blend till you obtain a bright green sauce with an intense aroma. Reserve.
  2. Boil the pasta in plenty of boiling, salted water with a drizzle of olive oil for 4-5 minutes. Serve the pasta with the pesto sauce.
  3. Season with salt and pepper, and add grated Parmesan to taste
Chopped basil quickly discolors. To keep your pesto green, add the same amount of chopped chives to your sauce.
