- 300 gr. tagliatelline
- 1 bunch basil
- 50 gr. pine nuts
- 150 ml. olive oil
- 50 gr. Parmesan cheese
- 1 clove garlic (optional)
- Salt and pepper
- Put a bunch of basil, the olive oil, a clove of garlic (optional), grated cheese and some nuts into a food processor and blend till you obtain a bright green sauce with an intense aroma. Reserve.
- Boil the pasta in plenty of boiling, salted water with a drizzle of olive oil for 4-5 minutes. Serve the pasta with the pesto sauce.
- Season with salt and pepper, and add grated Parmesan to taste
Chopped basil quickly discolors. To keep your pesto green, add the same amount of chopped chives to your sauce.
