Potatoes with a creamy béchamel sauce with smoked salmon

Ingredients
  • 8 baby potatoes
  • 2 slices of smoked salmon
  • 200g béchamel sauce
  • 50g gruyere cheese
  • 1 teaspoon of parsley
  • 1 egg yolk
Preparation
  1. In a bowl mix the béchamel with the cheese, parsley and egg yolk until smooth. Reserve.
  2. Cut the salmon into cubes.
  3. Cook the potatoes in boiling salted water.  Remove from the heat and allow to cool.  Then remove the inside of the potatoes and fill them with the smoked salmon and cover with a little of the cream sauce.  Brown in the oven and serve immediately.
