Ingredients
  • 8 Parmesan flowers
  • Selection of mixed lettuce
  • 50 gr, of walnuts
  • Olive oil
  • 1 bunch of olives
  • 2 tablespoons cider vinegar
  • 1 tray of cherry tomatoes
  • 1 teaspoon Dijon mustard
Preparation
  1. Beat the vinegar, mustard, a pinch of salt and slowly add 100 ml. of olive oil till you obtain a vinaigrette.
  2. Wash and chop the lettuce and arrange in serving dishes with the chopped walnuts, grapes and tomatoes. Serve with Parmesan flowers and mustard vinaigrette.
You can find Parmesan flowers at a good butchers. If you can’t get hold of any, simply used thinly sliced Parmesan . Also try with blue cheese and other fruit like pear, apple, etc..Parmesan goes well with young red wines such as Lambrusco, that are fresh, fine, persistent, and reminiscent of ripe fruit. These wines are smooth, savory and delicate on the palate. Also goes well with soft white wines.
