Ingredients
  • 600 gr. mushrooms (wild mushrooms, chanterelles, shiitake, enoki, etc)
  • 6 cloves garlic
  • 4 garlic sprouts
  • 2 bay leaves
  • 1 lemon grass
  • Ground pepper
  • Rosemary
  • Lemon thyme
  • 1 tablespoon salt
  • 400 ml. olive oil
  • 200 ml. sherry vinegar
Preparation
  1. Infuse the oil with herbs, garlic, garlic sprouts, pepper, salt and lemongrass for about 20 minutes over a low heat. Add the mushrooms and sherry vinegar. Let stand overnight outside the refrigerator.
  2. Conserve in the refrigerator. Before using, allow to reach room temperature.
