Ingredients
  • 1 ½ kg of fresh clams
  • 1 onion
  • 2 cloves garlic, minced
  • 1 dl. tomato sauce
  • 1 dl. brandy
  • 1 dl. sherry
  • 1 bay leaf
  • 1 tablespoon paprika
  • 1 tablespoon chopped parsley
  • Olive oil
  • Salt
Preparation
  1. Finely chop the onion, garlic and bay leaf. Sauté in a casserole dish with a little oil. 
  2. When browned, add the clams, sprinkle with paprika, stir and add the brandy. Flambé.
  3. When the flame goes out add the tomatoes and sherry. Cook to open clams.
  4. Remove the clams and put them on the serving dish. Meanwhile, reduce the sauce over a high heat and then use it to bathe the clams. Serve sprinkled with chopped parsley.
