For the coca (similar to a pizza base):
- Olive oil
- 200 gr. smoked cod
- 1 jar roast peppers
- 1 sprig thyme
- 1 lettuce heart
- 2 cloves garlic
- Make a “volcano” out of the flour on your work surface. Add a good splash of olive oil, a pinch of salt and half a glass of water to the “crater”, spooning in the flour little by little until you’ve obtained a smooth, even dough. Roll out the dough with the help of a rolling pin until very thin and bake at 190º C for 8-10 minutes until cooked through. Remove from the oven and reserve.
- Saute the whole garlic cloves in a little olive oil, add the peppers cut into strips and remove from heat. Allow to cool.
- Arrange the lettuce heart leaves, pepper slices, garlic and sliced smoked cod on top of the “coca” base, drizzle with a dash of olive oil and serve.
