For the coca (similar to a pizza base):

  • Flour
  • Water
  • Olive oil
  • Salt


  • 200 gr. smoked cod
  • 1 jar roast peppers
  • 1 sprig thyme
  • 1 lettuce heart
  • 2 cloves garlic
  1. Make a “volcano” out of the flour on your work surface. Add a good splash of olive oil, a pinch of salt and half a glass of water to the “crater”, spooning in the flour little by little  until you’ve obtained a smooth, even dough. Roll out the dough with the help of a rolling pin until very thin and bake at 190º C for 8-10 minutes until cooked through. Remove from the oven and reserve.
  2. Saute the whole garlic cloves in a little olive oil, add the peppers cut into strips and remove from heat. Allow to cool.
  3. Arrange the lettuce heart leaves, pepper slices, garlic and sliced smoked cod on top of the “coca” base, drizzle with a dash of olive oil and serve.
For a simpler version, serve the cod and peppers on toasted bread.White crianza.
