Ingredients
  • 2 fennel bulbs
  • 2 endives
  • 250 gr. of tomatoes
  • 2 green onions
  • 1 bunch asparagus
  • 1 red pepper
  • 1 corn cob
  • 5 oyster mushrooms
  • 1 zucchini
  • 1 eggplant
  • 5 tablespoons oil
  • The juice of a ginger root, about 4 cm
  • 1 tablespoon lemon juice
  • 1 tablespoon oregano
  • Black pepper
  • Salt

 

Preparation
  1. Chop off the tips and bases of the fennel. Cut the endive into quarters. Remove the tops of the stalks of the onions and the base of the asparagus. Chop the peppers lengthwise into four parts. Cut the corn, eggplant and zucchini.
  2. Mix oil, lime juice and ginger, pour the mixture over vegetables and grill about 30 min.
