Ingredients
  • 1 duck breast 600 gr.
  • 3-4 sheets filo pastry
  • Soy sauce
  • Olive oil
  • 200 gr. green beans
  • 1 tray of raspberries
  • 1 clove of garlic.
Preparation
  1. Remove fat from the duck breast and cut into thin strips across the breast. You can reserve the fat for roasting other meats. Wrap each strip of duck breast with a sheet of filo pastry and fry in a splash of hot olive oil, for a couple of minutes till crunchy and golden brown. Remove and dry on kitchen paper.
  2. Serve with a bowl of soy sauce. You can boil some beans and then sauté with a clove of garlic to garnish this dish. Finally, add some raspberries to the sauté.
Roast the strips of duck in the oven for about 6-8 mins at 220°C being careful not to let the duck dry out: duck meat should be slightly rare and juicy. You can also prepare this dish with crumbled-up duck confit.
