Zing up your pumpkin soup with a hint af orange

Ingredients
  • 1kg pumpkin
  • 3 oranges
  • 1 sprig rosemary
  • 1 splash olive oil
  • 1 vanilla pod
  • Half cup of sunflower oil
Preparation
  1. Remove skin and seeds from pumpkin, dice and place on an oven tray. Cover with water, add a splash of olive oil, a sprig of rosemary and a pinch of salt.
  2. Cover the tray with aluminum foil and put in the oven for 20 minutes at 180 º.
  3. Remove and blend, add orange juice, season and serve.  Decorate with with some orange slices
You can serve this cream accompanied by a few drops of vanilla oil: open a vanilla pod and blend with half a glass of sunflower oil.
