Ingredients
  • 250 g couscous
  • 1/2 onion
  • 100 g of green beans
  • 1/2 red pepper
  • 100 g pumpkin or squash
  • Olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon curry
  • 1 teaspoon ground coriander
  • 80 g of pitted dates
Preparation
  1. Put the couscous in a bowl.
  2. Pour a glass and a half of salted boiling water over the couscous, cover and allow to stand until all the water has been absorbed.
  3. Meanwhile chop the onion. Cut the beans into small pieces. Remove tops and seeds from peppers and chop into small cubes. Remove pumpkin rind and chop pumpkin into small cubes.
  4. Heat a little oil in a frying pan and fry the onion with a pinch of salt and the spices for 3-4 minutes. Add the cubes of pepper, pumpkin and green beans. Pour over a cup of boiling water, cover and simmer until pumpkin and beans are tender.
  5. Cut the dates into four pieces.
  6. Mix the he couscous with vegetables and dates in a bowl, season with salt and serve.
