Ingredients
  • 4 slices of bread
  • 4 fillets of desalted cod
  • 1/2 kg. tomatoes
  • 1 zucchini
  • 1 eggplant
  • 1 onion
  • 1 green pepper
  • 3 cloves garlic
  • 1 teaspoon sugar
  • Virgin olive oil
Preparation
  1. Wash and dice the eggplant and zucchini. Wash the peppers and tomatoes, remove seeds and chop into small pieces. Finely chop onion and garlic.
  2. Saute the onion and garlic with a little olive oil. When browned, add green pepper and then the eggplant and zucchini. When the vegetables are tender, add the tomatoes, sugar and season lightly. Remove and set aside.
  3. Cook the cod in plenty of salted water. When tender, remove from heat and reserve.
  4. Toast bread, top with sanfaina vegeable sauce and then cod. Serve hot.
