- 500g of unsalted cod
- 2 tomatoes
- 1 peach
- 150g black olives
- Salt and pepper
- Extra virgin oil
- A sprig of fresh oregano
- Wash, grate and fry the tomatoes slightly then remove the stones from the olives and chop.
- Wash the peaches and cut into 1 cm slices and quickly sear on both sides.
- Remove the skin from the cod and cut into thin slices of about ½ cm.
- Place the cod into 4 dishes and add the chopped olives, seared peaches, a few teaspoons of grated tomato, a sprig of oregano and a few drops of olive oil.
