Ingredients
  • 500g of unsalted cod
  • 2 tomatoes
  • 1 peach
  • 150g black olives
  • Salt and pepper
  • Extra virgin oil
  • A sprig of fresh oregano
Preparation
  1. Wash, grate and fry the tomatoes slightly then remove the stones from the olives and chop. 
  2. Wash the peaches and cut into 1 cm slices and quickly sear on both sides.  
  3. Remove the skin from the cod and cut into thin slices of about ½ cm.  
  4. Place the cod into 4 dishes and add the chopped olives, seared peaches, a few teaspoons of grated tomato, a sprig of oregano and a few drops of olive oil.
