- 500 gr. anchovies
- 2 eggs
- 50 gr. flour
- Olive oil
- Open the anchovies up and and remove the backbone and small side bones. Rinse well under cold running water.
- Dry the fish and then coat in flour. Shake off any excess flour and coat in beaten egg. Fry in plenty of hot olive oil. Serve with lemon slices.
You can soak the anchovies in salted ice water for half an hour to give them a more thorough cleaning. Add half a red pepper between two anchovies before coating in batter.
