- 1 cucumber
- 1 tbsp. freshly shredded oregano leaves
- 2 tbsp. extra virgin oil
- 1 tbsp. balsamic vinegar
- Salt and pepper
- Slice the cucumber into very fine slices using a mandolin.
- Then place in a serving bowl and sprinkle with salt, some freshly ground pepper and the oregano then drizzle over the oil and vinegar.
- Allow to marinate for 10 minutes before serving.
