Ingredients
  • 1 large onion
  • 4 tablespoons cooked corn
  • ½ large avocado
  • 50 ml oat milk
  • ½ tsp lemon zest
  • 2 tablespoons olive oil
  • Herb salt
Preparation
  1. Cut the onion in half moons and brown in a skillet with 1 tablespoon of olive oil and a little herb salt.
  2. Add the diced avocado, corn, 1 tablespoon olive oil, lemon zest and water, just to cover. Cook until the avocado is very soft.
  3. Blend with the help of a blender along with the oat milk.
  4. Pass through a strainer.
  5. Cool and serve.
