Ingredients
  • 1 avocado
  • 1 tray of mini corn
  • 1 cooked beetroot
  • 2 tomatoes
  • 100g beans
  • 1 onion
  • 1 sprig of oregano
  • 20g sesame seeds
  • 1 sprig of dill and mint
  • 1 lemon
Preparation
  1.  Use up any vegetables in the fridge, or the ingredients I have mentioned above. Cut the beans and mini corns into thin strips and quickly stir fry.  As this is a salad of "crudités” it is not necessary to cook the above.  Now place these in a bowl along with the rest of the sliced up vegetables.  Sprinkle with some sesame seeds, olive oil, herbs, lemon juice and a pinch of Maldon salt. Mix and serve.
This salad can be eaten alone or as an accompaniment with meat or fish.
