Ingredients
  • 4 fillets of pork
  • 2 red peppers
  • Olive oil
  • Salt and pepper
  • 2 cloves of garlic
  • Parsley
Preparation
  1. Heat the oven to 180 degrees and place the peppers on a tray in the oven and cook until the skin blackens.  Then remove from the oven, wrap in a newspaper and allow to cool slightly. Now peel the charred skin from the peppers.  Cut them into strips and sauté with the garlic and a splash of olive oil.  Set aside.
  2. In a skillet with just a splash of olive oil, fry the fillets until they are just cooked then, serve them with the roasted peppers and a pinch of parsley.

 

You can buy roasted peppers already prepared just sauté them with a couple of cloves of garlic, add a teaspoon of sugar to correct the bitterness of peppers.
