- 4 tablespoons olive oil
- 2 shallots, chopped
- Whole-grain bread, cut in half
- 2 tomatoes, chopped
- 2 cloves garlic, halved
- A bunch of chicory (or other lettuce)
- Salt and Pepper
- Heat 2 tablespoons oil in a frying pan and fry the shallots, until they are golden-brown and crisp. Add tomatoes and lighltly saute.
- Toast the bread and rub with the garlic clove.
- Arrange the tomatoes, shallots and lettuce over the toast.
