Ingredients
  • 4 tablespoons olive oil
  • 2 shallots, chopped
  • Whole-grain bread, cut in half
  • 2 tomatoes, chopped
  • 2 cloves garlic, halved
  • A bunch of chicory (or other lettuce)
  • Salt and Pepper
Preparation
  1. Heat 2 tablespoons oil in a frying pan and fry the shallots, until they are golden-brown and crisp. Add tomatoes and lighltly saute.
  2. Toast the bread and rub with the garlic clove.
  3. Arrange the tomatoes, shallots and lettuce over the toast.
