Ingredients
  • 200 gr of quinoa
  • 400 ml of water
  • 200 gr of cooked chickpeas
  • 1 teaspoon of green tea
  • 1 red onion
  • 1/2 courgette
  • 1 bunch of spinach
  • 150 gr cherry tomatoes
  • 150 gr of pumpkin
  • 8 shiitake mushrooms
  • 1 teaspoon of turmeric
  • 1 teaspoon of 5 Chinese species
  • 3 green cardamoms
  • 1 teaspoon of rosemary
  • 1 medium lime (the peel)
  • ½ lime juiced
  • Chopped fresh parsley
Preparation
  1. The first thing to do is repeatedly wash the quinoa to remove the natural kernel that can give it a sour taste. Stir the tea into the water then place in a saucepan and bring to the boil. Now add the quinoa a little salt and boil again then lower the heat and let it simmer for 10 minutes. Turn off and let it rest.
  2. Preheat the oven to 150 °. Cut the pumpkin into squares the same size as the cherry tomatoes.
  3. Place the pumpkin and cherry tomatoes on a baking tray and sprinkle with olive oil, salt, pepper and the rosemary, place in the oven to cook slowly until tender this normally takes 1-1 1/2 hours.
  4. Wash the spinach leaves, removing any large stems and separate the large leaves from the small.
  5. Julienne the red onion and courgette and slice the mushrooms. Take a wok add a tablespoon of olive oil and 1 tablespoon of water. Now sauté the onion, spices, cardamom seeds and lime peel, until the onions are cooked but al dente. Next add and sauté the courgette, mushrooms, large spinach leaves and cooked chickpeas, remove from the heat and add the small leaves of spinach.
  6. Sprinkle the lime juice over the pumpkin and roasted cherry tomatoes.
To assemble the dish

Place the quinoa on the middle of the dish and make a well in the center, place the sautéed vegetables and roasted pumpkin and tomatoes on top and decorate with the chopped fresh parsley.

This dish is a meal in itself as it contains proteins, carbohydrates and vegetables also it is cooked in a variety of ways. This is a good choice if you want to take lunch to work.
