Ingredients
  • 1 bunch of sage
  • Tempura flour
  • Ice water
  • Olive oil
Preparation
  1. Mix one tablespoon of flour tempura with a splash of very cold water, icy if possible to obtain a very liquid batter. Dip the sage leaves in the batter, till each leaf is coated with a layer of almost translucent batter.
  2. Fry in plenty of hot olive oil for just 15 seconds. Drain on kitchen paper and serve.
Serve with a mayonnaise or layer different vegetables with herbs. Goes great with shrimp, chicken, etc. .
