Ingredients
  • A large pumpkin
  • 200 gr. brown rice
  • 100 gr. Wild Rice
  • 200 gr. Seitan
  • 9 dried apricots
  • 1 bouillon cube
  • Juice of one orange
  • 2 cloves
  • 2 tablespoons oil
  • Half a teaspoon of nutmeg
  • A cinnamon stick
Preparation
  1. Cook both types of rice in four times their volume of water for 30 minutes with broth, cloves and cinnamon.
  2. Finely chop the leek and seitan and dice the apricots.
  3. Simmer the leek over a low heat for two minutes with nutmeg and 2 tablespoons of oil. Add seitan and when it starts to brown, add the juice and the apricots and cook for 5 minutes.
  4. Strain the rice, remove the cinnamon and cloves and mix with the seitan mixture.
  5. Cut the top off the pumpkin, scoop out the seeds and fill with rice. Bake at 180 º C for 40 minutes.
