Ingredients
  • 500g of mushrooms
  • 1 tbsp. of smoked paprika
  • 2 leeks
  • 2 Cloves of garlic
  • 1 onion
  • 1 glass of white wine
  • C/s Salt
  • C/s pepper
  • C/s olive oil
  • C/s breadcrumbs
  • C/s ketchup
  • C/s mayonnaise
  • C/s tomato
  • C/s bay leaves
  • 4 hamburger buns

For the mayonnaise:

  • 125ml sunflower oil
  • 80ml soymilk
  • 1 tbsp. lemon juice
  • Pinch of salt and pepper
Preparation
  1. Cut the mushrooms into slices and cook in a frying pan with a little olive oil over a high heat until browned.  Do them in batches if they don’t all fit in the pan.  Reserve at room temperature and set aside a few slices to serve in the buns.
  2. Peel and chop the garlic and onion and cook over a medium heat with a little olive oil.
  3. Cut and slice the leeks and add to the onion and garlic, cook for 5 minutes.  Add the wine and allow it to reduce until there is no liquid left.  Reserve at room temperature.
  4. In a bowl mix the mushrooms, leeks, garlic, onion, paprika and salt and pepper to taste then add the bread crumbs until it turns into a compact mass.
  5. Shape the mixture into burger shapes and cook in a skillet over a medium heat using a spray of oil.
  6. MAYONNAISE:  Minipim the soya milk with the oil then add the salt and pepper and lemon juice then minipim until it turns into mayonnaise.
  7. Place the burger in a bun, add the sliced tomato, mushrooms and a little mayonnaise, then serve with ketchup, mustard and a cold beer!
Use shitake mushrooms with sage leaves if you want to try a burger with a very different and amazing flavor!
