Ingredients
  • 200g cous cous
  • 100g of wild mushrooms
  • 1 bunch of grapes
  • 1 tray of cherry tomatoes
  • 1 bunch wild asparagus tips
  • 1 bunch thyme
  • 1 carrot
  • 1 onion
  • 1 red pepper
  • 1 green pepper
Preparation
  1. Hydrates the couscous in a liter of water until it doubles in volume. Reserve.
  2. Chop all the vegetables finely and saute in a splash of olive oil. When the vegetables are tender, add the sliced mushrooms, sauté and when they start to brown add the cous-couscous.
  3. Serve with a sprig of thyme.
When you've hydrated the cous-cous, add half a cup of coconut milk to give even more flavor. You can also add orange blossom water to the water.
