Ingredients
  • 6 figs
  • 250ml Port
  • 1 stick of cinnamon
  • 2 oranges
  • 150g sugar
  • Seedless raisins
  • 2 tablespoons of honey
  • Mascarpone or ricotta
Preparation
  1. Soak the the raisins in the port. Remove from port. Make the jelly by mixing the port, sugar, honey, cinnamon, orange zest and juice and bringing to the boil.  Add the raisins. Simmer for a few minutes until the jelly is ready.
  2. Slice the figs and layer with mascarpone.
  3. Cover with port wine jelly.
You can check if the the jelly is ready by putting a small amount on a cold plate and see if you have acquired the desired consistency.
