Ingredients
  • ½ a melon
  • 250g Greek yogurt
  • Salt and pepper
  • Extra virgin olive oil
  • A sprig of fresh mint
Preparation
  1. Remove the seeds from the melon and wash the melon and skin.  Place the chopped melon with it skin into a blender and mix. 
  2. Then add some chopped mint a few drops of olive oil and salt and pepper to taste.  
  3. Take some glasses and place some Greek yogurt at the base then add the melon soup.  
  4. Serve cold.
