- ½ a melon
- 250g Greek yogurt
- Salt and pepper
- Extra virgin olive oil
- A sprig of fresh mint
- Remove the seeds from the melon and wash the melon and skin. Place the chopped melon with it skin into a blender and mix.
- Then add some chopped mint a few drops of olive oil and salt and pepper to taste.
- Take some glasses and place some Greek yogurt at the base then add the melon soup.
- Serve cold.
