- 350 g of pineapple
- 1 vanilla pod
- 300 ml of water
- 50 g clear honey or rice syrup
- Peel pineapple and cut into thin slices.
- Meanwhile, take the vanilla pod, slit it open lengthways and scrape out the seeds. Add to a saucepan of water along with the honey or syrup and boil over a high heat until dissolved. Lower the heat, add the the pineapple slices, cover and simmer for 5 minutes. Remove from the heat, place in bowl and allow to cool.
