Ingredients
  • 250 gr. sieved flour
  • 1/2 l. milk
  • 3 eggs
  • 1 tablespoon olive oil
  • 1 tablespoon Grand Marnier
  • 2 tablespoons icing sugar

For the sauce:

  • 200 gr. butter
  • 100 gr. sugar
  • The zest of 2 oranges and a lemon
  • The juice of one orange
  • 2 cups Grand Marnier
Preparation
  1. In a bowl, beat the eggs with milk, sieved flour, oil, salt and a tablespoon of Grand Marnier. You can also use a blender. Let the batter stand for half an hour in the refrigerator and then form the crepes. Heat a pan with a knob of butter and pour on a few spoonfuls of the batter, flipping halfway through.
  2. Serve with the sauce: mix cream and butter with sugar, fruit zest and a couple of teaspoons of liquor. Brush the crepes with the mixture and bake at 180ºC for 5 minutes.
  3. Meanwhile, we burn off the alcohol in the Grand Marnier over high heat. Serve the crepes bathed in the hot liqueur.
You can use any filling you like. Also great for savory dishes, such as pancakes stuffed withduck confit, chicken or simply with sauteed vegetables.
