  • 1 carrot
  • 50 gr. chocolate with (70% Cocoa)
  • 500 ml. chicken stock
  1. Clean and cook the partridge in a saucepan with a drizzle of olive oil. When they start to brown, add the julienned onions, carrots, garlic and leeks.
  2. When the vegetables are browned, add the chicken stock and simmer for half an hour.
  3. Add the chocolate and cook for a further 10 minutes. Serve the partridge accompanied by the sauce and fried banana, fried in hot frying pan with a drizzle of olive oil.
Run the sauce through a blender before adding the chocolate for a creamier, smoother sauce
