Ingredients
- 1 green pepper
- 1 cucumber
- 1 Granny Smith apple (green)
- 1 spring onion
- Half an avocado
- Juice of half a lemon
- 4 basil leaves
- 4 mint leaves
- 1 tomato
- Olive oil
Preparation
- Chop the peppers and discard the seeds and the ends. Peel the cucumber and chop.
- Wash the apple, chop and remove the core and pips. Wash the spring onion and cut into chunks.
- Put all these ingredients into the bowl of a blender, along with 600 ml of cold water, the avocado, lemon juice, salt and pepper. Blend.
- Sieve through a strainer.
- Chop the herbs and dice the tomato. Mix and season with a tablespoon of olive oil, salt and pepper.
- Serve the gazpacho with the garnish.
