- 2 kg. onions
- 1 potato
- 1/2 l. cream
- Vegetable stock
- In a saucepan, saute 2 kg. julienned onions then leave to simmer over a low heat for an hour until the onions caramelize.
- Add 1 finely chopped potato and cook for a few minutes.
- Add 1/2 l. of cream and a glass of vegetable stock. Simmer for a few minutes, blend and serve.
Serve with cherry tomatoes.
