- 2 x mozzarella drained and torn into large chunks
- 2 slices of crusty bread
- 4 tsp. extra virgin oil
- 1 clove of garlic peeled
- 1 lemon
- 10g 0f parsley
- 1 tbsp. double cream
- Drizzle the bread with 2 tsp. of olive oil and toast on each side in a frying pan until brown and crispy.
- Rub with the garlic and chop into bite size bits.
- Place the cheese onto a serving dish, grate over the lemon zest and peel the lemon and cut into segments and add this with the chopped parsley and bread to the dish then drizzle with the cream and remaining oil.
