Ingredients
  • 30 gr. halloumi cheese
  • 100 gr. dried tomatoes in oil
  • 1 bag of mixed salad greens
  • 100 gr. Greek olivs
  • Olive oil
  • Salt
  • 50 gr. pine nuts
Preparation
  1. In a bowl, mix the lettuce with olives, tomatoes and pine nuts. Mix well and season with a splash of olive oil and a pinch of salt. Serve on plates.
  2. Meanwhile, in a pan without oil, fry the cheese cut into medallions for 2 minutes per side, until lightly toasted and asoft. Serve hot cheese over salad.

 

If you can’t find halloumi cheese, use provolone cheese or another that fries well.
