Ingredients
- 1 curly endive
- 2 avocados
- 1 lemon
- 2 blood oranges
- 1 tart Granny Smith apple
- 1 sprig of dill
- Citrus oil
- A purple potato
- 150g smoked salmon
Preparation
- Mix the curly endive leaves – use the yellower, less bitter leaves –with sliced avocado in a salad bowl.
- You should sprinkle lemon juice over the avocado to avoid discoloring. Add orange segments, chopped apple, dill, and chopped cooked, cold purple potato.
- Mix all ingredients and add the sliced smoked salmon. Sprinkle the salad with citrus oil and a pinch of salt flakes.
Use the slices of salmon to salad to make salad cannelloni – just roll everything up!
