Ingredients
  • 300 gr. rice
  • 1 diced rabbit
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • 1/2 can of tomato sauce
  • 800 ml. chicken stock
  • 2 cloves garlic
  • 100 ml. olive oil
  • 1 egg
Preparation
  1. Saute the onion, garlic and peppers, all finely chopped.
  2. When they start to brown, add the rabbit. Stir and allow to brown. Add the rice and tomato sauce. Stir well and add the boiling chicken stock. Place the casserole in the oven at 180ºC for about 18 minutes.
  3. Allow all the stock to evaporate and the rice to become lightly toasted. Remove the dish from the oven and serve immediately.
Prepare an alioli mayonnaise to accompany the rice. Blend one egg with a clove of garlic in a blender. Slowly add olive oil until the mayonnaise thickens. Serve in small bowls to accompany the rice.
