A great alternative to wheat flour

  • 200 grs organic corn flour
  • 2 eggs
  • 3 medium onions
  • 1 organic mozzarella
  • Olive oil-salt-pepper
  1. Dice the onions and sauté with 2 tablespoons of olive oil and salt. When they start to turn transparent, add 1 cup of water. Simmer for 7 minutes and remove from heat.
  2. In a bowl beat the eggs, add a pinch of salt and the corn flour, mix gently and add the onion with their juices.
  3. Mix well, adding more water if necessary as the texture should be liquid. Cut cheese into pieces and add. Also add salt and pepper. Place in a baking dish greased with oil and bread crumbs and cook for about 50 minutes at 170 º.
