- 200 grs organic corn flour
- 2 eggs
- 3 medium onions
- 1 organic mozzarella
- Olive oil-salt-pepper
- Dice the onions and sauté with 2 tablespoons of olive oil and salt. When they start to turn transparent, add 1 cup of water. Simmer for 7 minutes and remove from heat.
- In a bowl beat the eggs, add a pinch of salt and the corn flour, mix gently and add the onion with their juices.
- Mix well, adding more water if necessary as the texture should be liquid. Cut cheese into pieces and add. Also add salt and pepper. Place in a baking dish greased with oil and bread crumbs and cook for about 50 minutes at 170 º.
