Ingredients
  • 16 razor shells
  • 250 gr. tempura flour
  • 1/2 cup of cold white wine
  • Sparkling water, chilled
  • Mizuna leaves
  • Rice noodles
  • Beet sprouts
  • Soy sauce
  • Olive Oil
Preparation
  1. With the help of a knife, remove the flesh from the shell. Clean thoroughly and remove the stomach (which is prone to burst when fried!).
  2. Mix the tempura flour with the wine and slowly add the cold sparkling water until you obtain a batter. Dip the razor shell flesh in the batter, making sure that it’s well coated. Fry in hot oil until golden brown.
  3. Serve with mizuna salad, fried rice noodles and soy sauce.
