Ingredients
- 16 razor shells
- 250 gr. tempura flour
- 1/2 cup of cold white wine
- Sparkling water, chilled
- Mizuna leaves
- Rice noodles
- Beet sprouts
- Soy sauce
- Olive Oil
Preparation
- With the help of a knife, remove the flesh from the shell. Clean thoroughly and remove the stomach (which is prone to burst when fried!).
- Mix the tempura flour with the wine and slowly add the cold sparkling water until you obtain a batter. Dip the razor shell flesh in the batter, making sure that it’s well coated. Fry in hot oil until golden brown.
- Serve with mizuna salad, fried rice noodles and soy sauce.
