Ingredients
  • 250 gr. porcini mushrooms or shiitake
  • 1 good dash of olive oil
  • 1 pinch of flake salt
  • 1 sprig of dill
  • 1 sprig of thyme
  • 1 pinch pepper
Preparation
  1. Cut the mushrooms into extremely thin slices, and arrange on a serving dish that can go in the oven.
  2. Brush the mushrooms with olive oil and heat in the oven for just 30 seconds at 180º.
  3. Serve with pepper, flake salt and herbs.
For a carpaccio with a more intense aroma, use a mushroom oil. Make your own by slow cooking some mushrooms in olive oil over a low heat for half an hour. Allow the oil to cool and save it for other dishes such as rice, pasta or sauteed vegetables.
