- 250 gr. porcini mushrooms or shiitake
- 1 good dash of olive oil
- 1 pinch of flake salt
- 1 sprig of dill
- 1 sprig of thyme
- 1 pinch pepper
- Cut the mushrooms into extremely thin slices, and arrange on a serving dish that can go in the oven.
- Brush the mushrooms with olive oil and heat in the oven for just 30 seconds at 180º.
- Serve with pepper, flake salt and herbs.
For a carpaccio with a more intense aroma, use a mushroom oil. Make your own by slow cooking some mushrooms in olive oil over a low heat for half an hour. Allow the oil to cool and save it for other dishes such as rice, pasta or sauteed vegetables.
