Ingredients
  • 250 gr. of canned crab meat
  • 1 tray of asparagus sprouts
  • 50 gr. trout roe
  • Olive Oil
  • Cider vinegar
  • Salt flakes
  • 12 mini cherry tomatoes
  • 1 sachet of squid ink
Preparation
  1. In four shot glasses, serve a portion of crabmeat, accompanied by asparagus sprouts, trout roe and tomatoes. You can also add a few lettuce leaves or bean sprouts.
  2. Accompany with a vinaigrette: mix 3 parts olive oil with cider vinegar, add the squid ink, a pinch of salt, mix and serve.
Ideally you shuld make this dish with fresh crab. Cook in a pot with plenty of salted water for 4-5 minutes. Cool in ice water.
