The route of the pintxos

We lose ourselves in the streets of old San Sebastian, our only guide through the maze a haunting melody from the traditional instrument, the txalaparta.

Under a fine drizzle, the famous xirimiri, we find ourselves entering a delightful culinary world in miniature ... the route of the tapas, or pintxos in local parlance.

Basque cuisine is rightly renowned worldwide and its birthplace is here in San Sebastian, where the only guide you need is the aroma of good cooking which fills the evening air.

It hardly matters where you stop. Every eatery you come across will reward you with food cooked with love and dedication. In Euskadi, there’s not a single dish that can’t be turned into a tapa. From the classic Gilda to deconstructed tortillas to txipirones (baby squid) – you’ll find it all on the bar tops of San Sebastian, where the creative food is inspired by the honesty and simplicity of the flavors.

From Basque culinary tradition, we have inherited dishes such as bacalao al pil-pil, kokotxas, kabratxo pie, txipirones in ink, salsa verde, crab, baby eels, marmitako, intxaursalsa, dishes both sweet and savory, reinterpreted today in miniature.

Such is the importance of the pintxo in a city like San Sebastian, that there is even a pintxo route provided by the local tourist office, who are all too aware of the importance of food for the town’s economy and tourism. Here’s a list of some of the places we visited and where we were seduced by the expertise of the Basque cooks or Sukaldari.
