Refreshing drink ideas for your table

Elderflower slushy

You will need

  • 10 large heads of elderflowers
  • 900ml boiling water
  • 340g sugar
  • 2 tablespoons Mapel syrup
  • 25 g citric acid

To make

  1. Place the elderflowers in a large stainless steel pan or plastic bucket, pour over the boiling water, add the sugar and stir. Add the citric acid and stir in the zest.
  2. Cover with a clean damp cloth and leave somewhere cool and dark to steep for 48 hours. Strain through a sieve lined with muslin.
  3. Put into tupper ware box and straight into the freezer. 24 hrs. Before serving take out of freezer fifteen minutes before hand.
  4. Serve and enjoy

Tip

Put a squeeze of lemon on the slushy just before serving
