Quail in Port wine sauce

Ingredients

    • 4 quail
    • 2 apples
    • 1 glass port wine
    • 1 onion
    • 1 sprig thyme
    • 1 vanilla pod

Method

  1. Clean the quail and season
  2. Stuff apple quarters inside.
  3. Put julienned onion, a bunch of thyme and vanilla pod on a baking tray or in an oven-ready dish.Lay the quail on top and bake at 180ºC for about 25 minutes.
  4. Remove from the oven and add the Port wine.
  5. Allow the sauce to reduce and serve with the quails.

Tip

Add a vanilla pod to the sauce for extra sweetness.
