Ingredients

    • 4 fillets of cod
    • 200 gr. Spinach
    • 50 gr. raisins
    • 50 gr. pine nuts
    • 2 tablespoons honey
    • 1 tablespoon soy sauce

Method

  1. Add the desalted to a saucepan, cover with water and bring to the boil for two minutes. Remove from heat, take out the cod and dry it gently with the help of a clean kitchen cloth or absorbent paper.
  2. Just before serving, saute the Spinach with a drizzle of olive oil in a frying pan, along with the raisins and pine nuts. When the volume has decreased, after a few seconds, add two tablespoons of honey and a teaspoon of soy sauce.
  3. Make sure the Spinach doesn’t lose its intense green color by not cooking for too long.

Tip

You can also fry the cod in olive oil over a low heat and make a pil-pil sauce to accompany this dish.
