    • 250 gr. rocket
    • 1 tray of cherry tomatoes
    • 2 avocados
    • Olive Oil
    • 1 tray of mixed bean/vegetable sprouts
    • 4 grouper fillets 150 gr.
    • Olive Oil
    • Lemon juice

Method

  1. Fry the grouper fillets with a drizzle of olive oil in a frying pan until cooked through.
  2. In a bowl, mix the rocket with sprouts and tomatoes, and dress with a splash of olive oil. Serve up on plates and accompany with sliced,lightly bathed in lemon juice, and the fish fillets.

Tip

If you’re not using all the avocado, keep the part with the stone intact in the fridge. Use sprouts to accompany fish or enrich salads. Use beet, alfalfa, pea sprouts, etc. ..
