Quince jelly and cheese skewers

Ingredients

    • Quince jelly
    • Smoked Idiazábal cheese
    • Toasted sesame seeds
    • Roast almonds, thinly sliced
    • Duck ham

Method

  1. With the help of a cheese slicer – or the help of a friendly butcher – cut the quince jelly into very thin slices, and cover with cheese slices of equal thickness. Arrange another layer of quince jelly, another of cheese, as if you were making a lasagna.
  2. Cut the lasagna with a thin knife into small cubes and sprinkle with sesame seeds and sliced almond. You can also try pistachio. Skewer the cubes and serve.

Tip

If you can’t get hold of smoked Idiazábal cheese, try using a semi-cured Manchego.
