Ingredients

    • 2 large onions
    • 1 leek
    • 1 carrot
    • 1 tomato
    • 1 bulb of garlic
    • 4 sprigs of thyme
    • 1 stick of bread
    • 4 Egg yolks
    • Olive oil
    • Salt

Method

  1. Saute the onions, leek and garlic in a pressure cooker  with a dash of olive oil. Once the vegetables begin to brown, add the tomatoes and carrots, cover with 2.5 liters of water and close the pressure cooker and boil for 30 minutes over a low heat.
  2. Cool the pressure cooker and open, strain off the resulting broth, season with  salt and pepper and heat in a saucepan with the thyme branches.
  3. Serve the soup in a soup dish with some slices of bread and an Egg yolk.

Tip

You can add a roast chicken carcass to the soup for a more intense flavor.

Recommended wine

A good white wine from the Albariño variety of D. O. Rias Baixas with a slightly fruity and floral aroma that goes well with the intensity of thyme.
