Artichokes with chestnuts and pistachios

Ingredients

    • 4 large artichokes (or 8 small ones)
    • 100 gr. soft tofu
    • 1/2 finely chopped onion
    • 10 peeled chestnuts
    • 50 gr. peeled and chopped pistachios
    • 3 Egg whites, beaten until stiff
    • 2 tablespoons chopped parsley
    • Juice of 1 lemon
    • Salt
    • Pepper
    • Olive oil

Method

  1. Take the stem and outer leaves of the artichokes and boil them in water with lemon juice. Drain, cut off the top half and remove the inner hairs.
  2.  Boil the chestnuts, peel and blend along with the tofu.
  3. Saute the onion until transparent, and then add the chopped pistachios, Parsley and chestnut/tofu mix.
  4. Season with salt and pepper and continue to simmer for 2 minutes.
  5. Add the beaten Egg whites. Stuff the artichokes with the mixture.
  6. Brush the base of the artichokes with olive oil and bake at a high temperature under the grill 10 minutes.
