Beet Sushi

Ingredients

    • 250 gr. sushi rice
    • 2 fresh, peeled beets
    • 1 pack wild Asparagus tips
    • 1 tablespoon cumin
    • 1 tablespoon rice vinegar
    • 1/2 finely chopped spring onion
    • 1 clove garlic, finely chopped
    • Salt
    • Pepper
    • 4 sheets nori seaweed
    • 200 ml. sour cream
    • Dill
    • 1 bamboo mat ˙

Method

  1. Wash the rice and cook in salted water till al dente. As it cools, add the rice vinegar, cumin, spring onion, garlic, pepper and salt to taste.
  2. Grate the beets with the coarser side of the grater and mix well into the rice. Blanch the Asparagus and reserve.
  3. Place the nori sheet with the smooth side down on the bamboo mat. Spread out the the rice, with wet fingers, on the sheet of nori. Add the Asparagus to the lower third. Roll the nori over, starting  from the bottom (closest to you with the help of the bamboo mat, holding the Asparagus in place with your. Continue rolling the nori slowly, pressing down lightly. Cut with a sharp, damp knife.
  4. Prepare the sauce by mixing sour cream with finely chopped dill.
