Mizuna leaf salad with prawns and avocado

Ingredients

    • 300 gr.prawns
    • 120 gr. mizuna leaves
    • 1 Avocado
    • 2 tablespoons olive oil

          For the dressing:

    • 5 tablespoons extra virgin olive oil
    • 2 tablespoons lime juice
    • 1 tablespoon pink peppercorns, lightly crushed
    • 1 teaspoon chopped chilli pepper
    • 2-3 pinches of sea salt

Method

  1. Shell and devein the prawns..
  2. Mix dressing ingredients and cover the prawns with half of the dressing.
  3. Cover with cling film and put in refrigerator for half an hour.
  4. Heat two tablespoons of olive oil in a frying pan and saute the prawns for 2-3 minutes until they change color. Allow to cool.
  5. Wash the mizuna leaves and dry in a salad spinner.
  6. Peel the Avocado, cut in half, removing the stone, and cut into strips.
  7. Arrange the mizuna leaves, prawns and Avocado on serving dishes. Pour over the remaining dressing and serve.
