Peaches with vanilla and mint

Ingredients

    • 4 peaches
    • 1 liter of water
    • 4 tablespoons brown sugar
    • 1 vanilla pod
    • 4 sprigs mint
    • 100 g melon
    • 6 Strawberries
    • 1 low-fat yogurt

Method

  1. Slice peaches in half and remove the stones.
  2. Gently simmer the water with the sugar and the open vanilla pod.
  3. When the sugar dissolves, raise the heat and simmer a further 10 minutes. Add peaches and reduce heat. Simmer covered a further another 10 minutes until the fruit is tender.
  4. Remove from heat, add the mint and let cool. Dice the melon and Strawberries.
  5. Serve the peaches in glasses with a little of the resulting syrup and a sprig of mint.
  6. Accompany each serving with a quarter of the chopped fruit, topped with a dollop of yogurt.
